For all you grillers out there, you’re going to want to check out these cheese-stuffed choripanes. Rolls stuffed with cheese, topped with chorizo and grilled, then finished simply with thick slices of tomato and chimichurri. This recipe is a new dish for the grill and a serious winner.
Spanish Tuna Patties with Aioli
These Spanish-inspired tuna patties are great for a snack or light lunch. Canned tuna flavored with onion, parsley, roasted red pepper, and smoked paprika, is formed into patties and pan-fried until crisp, then topped with a simple, zingy aioli.
This Thai chicken and mango salad is something I could eat literally every day. Poached chicken with julienned mango, carrot, and cucumber tossed in shallot and chili-infused dressing and topped with chopped peanuts , basil, and cilantro. What’s not to like?
Crispy, Ginger-glazed Tofu Bowl
Fried tofu with unbelievable crunch tossed in a perfectly-balanced glaze and accompanied by rice and plenty of crisp, fresh vegetables. If that ain’t a perfect dinner for a summer evening, I don’t know what is.
