Pumpkin Spice Latte Overnight Oats

Pumpkin spice latte season is a wonderful time of year. Everyone loves when the weather starts to turn crisp and those lattes, graced with the warming spices of autumn, come back to the menu at your local coffeeshop. But there’s no reason you can’t have them for breakfast too. This recipe brings those flavors (as well as a bit of actual pumpkin) into your breakfast on-the-go routine. Simple to make ahead and wonderful to eat, these pumpkin spice latte overnight oats are a perfect way to start the day during the busy days of fall. And, if you’re not a coffee drinker, just leave out the instant coffee and you have yourself a pumpkin pie overnight oats recipe instead.

Pumpkin Spice Latte Overnight Oats

A super simple recipe to eat your favorite latte for breakfast. Great for a grab and go breakfast, these oats pack as much caffeine as an 8-ounce cup of coffee. Or, leave the coffee out and you've got yourself pumpkin pie overnight oats.

Ingredients
  

  • 1 cup oats
  • 1 cup milk dairy or otherwise
  • ½ cup pumpkin puree
  • 2 tbsp maple syrup
  • 2 tsp instant coffee
  • 1 ½ tsp pumpkin spice
  • ¼ tsp vanilla extract

Instructions
 

  • Overnight oats are as simple as they come, a perfect make-ahead breakfast. Just mix all of the ingredients together in a jar and toss it in the fridge overnight. In the morning, you have a delicious breakfast on the go. Give it a stir and you’re ready to eat.
