Pumpkin Spice Latte Overnight Oats
A super simple recipe to eat your favorite latte for breakfast. Great for a grab and go breakfast, these oats pack as much caffeine as an 8-ounce cup of coffee. Or, leave the coffee out and you've got yourself pumpkin pie overnight oats.

- 1 cup oats
- 1 cup milk dairy or otherwise
- ½ cup pumpkin puree
- 2 tbsp maple syrup
- 2 tsp instant coffee
- 1 ½ tsp pumpkin spice
- ¼ tsp vanilla extract
Overnight oats are as simple as they come, a perfect make-ahead breakfast. Just mix all of the ingredients together in a jar and toss it in the fridge overnight. In the morning, you have a delicious breakfast on the go. Give it a stir and you’re ready to eat.
