This Thai chicken and mango salad is something I could eat literally every day. Poached chicken with julienned mango, carrot, and cucumber tossed in shallot and chili-infused dressing and topped with chopped peanuts , basil, and cilantro. What’s not to like?⁠

Fried tofu with unbelievable crunch tossed in a perfectly-balanced glaze and accompanied by rice and plenty of crisp, fresh vegetables. If that ain’t a perfect dinner for a summer evening, I don’t know what is.⁠
