Smoked Salmon Canapes

The French love seafood at Christmas. When trying to find traditional French Christmas foods, it was all oysters, lobster, and fish, and unfortunately fresh seafood just does not jibe all that well with buslife (depending on where you’re parked, of course). These smoked salmon canapes were the best that we could do given our surroundings at the time. They can be put together with ingredients found in every grocery store across the country and are a perfect little seafood appetizer for a Christmas feast.

Smoked Salmon Canapes

Ingredients:
3 oz. smoked salmon
½ cucumber, peeled and sliced into ¼” rounds
¼ cup sour cream
1 tbsp minced scallion
½ tsp black pepper
⅛ tsp garlic powder
½ tsp white wine vinegar

Garnish:
Sliced scallion greens
Salt + Pepper

Directions:
Mix together the sour cream, minced scallion, vinegar, pepper, and garlic powder in a small bowl.

Place a bit of smoked salmon on each cucumber round and top with a dollop of the sour cream mixture.

Garnish with thinly sliced scallion greens, a pinch of salt, and a sprinkle of freshly ground black pepper.
