This summer has been hot, hot hot. Fortunately, I’ve been hard at working making recipes for cocktails that will cool you right down. This month’s recipe round-up features four recipes for ice cold drinks which will make even the hottest days a little bit more bearable.

Elderflower Limoncello White Wine Spritz

First up we have the elderflower limoncello spritz. Halfway between a Hugo spritz and a limoncello spritz, this cooling cocktail features elderflower liqueur, limoncello, prosecco, and soda, as well as a lemon wheel and a sprig of mint. Elderflower and lemon are a classic flavor pairing, and these liqueurs add a bright and floral touch to the refreshing combination of prosecco and club soda on ice. Perfect for an evening cocktail on the patio.

Espresso Martini Popsicles

Next up are espresso martini popsicles. Made with the classic espresso martini ingredients, these popsicles are a triple-threat. They’ll cool you down, wake you up, and give you a little buzz. Espresso, coffee liqueur, vanilla vodka, and a bit of sugar and water come together to make a delicious popsicle which boasts an impressive 10% alcohol by volume. If you’re looking for a poolside treat which will get the party going and keep away that post-sun fatigue, look no further.

Strawberry White Wine Spritzer

Based on the classic Austrian spritzer, these drinks are made with medium-sweet riesling and club soda. To add a touch of panache and summer flavor, the standard ice is replaced with cubes filled with strawberry and mint. They are refreshing as can be, but be careful, because as the ice melts they only get more delicious. The second and third are even better than the first.

 

Frozen Watermelon Ginger Margarita

And finally we have frozen watermelon ginger margaritas. Frozen cubes of watermelon blended with Tequila or mezcal, ginger beer, and mint produce the kind of slushy summer drink that dreams are made of. Ice cold watermelon with a hint of smoky mezcal, a touch of mint, and a little nibble (not quite a bite) of earthy ginger, these cocktails go down especially easy on a hot afternoon.
