Ca Phe Trung – Vietnamese Egg Coffee
If you enjoy the decadence of a traditional Vietnamese coffee like I do, prepare yourself for a whole new level of luxury. Ca Phe Trung is a coffee drink made with condensed milk and egg yolks which is popular in Northern Vietnam.
Condensed milk alone is plenty to turn a cup of strong coffee into a delicious treat, but when whipped up with egg yolks it becomes a gorgeous custard that is more dessert than coffee. I wouldn’t drink this every day, but it is a means to really jumpstart your morning, getting your whole breakfast in a cup, or a delicious way to end a meal if you want to have enough energy to go dancing afterward.
Vietnamese Egg Coffee (Ca Phe Trung)
Serves 2-3
Ingredients:
12 oz. strong coffee or espresso
¼ cup condensed milk
2 egg yolks
Directions:
In a mixing bowl, whip the egg yolks and condensed milk until it holds soft peaks.
Divide the coffee evenly into serving vessels and top with the whipped mixture.
You might wish to serve it with a small spoon so that the topping can be eaten more easily.
